Nutmeg Logs

1 c. butter
2 tsp. vanilla
2 tsp. rum
3/4 c. sugar
1 unbeaten egg
3 c. flour
1 tsp. nutmeg
Cream butter and flavorings. Add sugar gradually. Blend in egg. Add
flour and nutmeg, mixing well. Roll dough into long snakes and cut into
pieces and 1/2 inch in diameter by 3 inch. Bake on ungreased sheets 12
to 15 minutes in 350 degree oven until lightly browned. Cool and frost.
FROSTING:
3 tbsp. butter
2 1/2 c. powdered sugar
2 to 3 tbsp. milk
1/2 tsp. vanilla
1 tsp. rum
Mix butter, sugar and flavorings. Gradually add milk to make spreading
consistency.
I like to sprinkle these with colored sugar, usually orange.

Chocolate
Snowflakes

2 c. sugar
1/2 c. vegetable oil
4 (1 oz.) sq. unsweetened chocolate, melted
4 eggs
2 tsp. vanilla
2 c. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. sifted powdered sugar
Combine first 3 ingredients in a large mixing bowl; beat at medium
speed of an electric mixer until blended. Add eggs and vanilla, mixing
well. Combine flour, baking powder and salt. Add about one fourth of
dry mixture at a time to chocolate mixture, mixing after each addtion.
Cover and chill dough at least 2 hours. Shape dough into 1 inch balls
and roll in powdered sugar. Place cookies 2 inches apart on greased
cookie sheets. Bake at 350 degrees for 10 to 12 minutes. Cool on wire
racks. Yield: 8 dozen.

Candy
Cookies (I can't find a picture of these either. Imagine a
small bar cookie with a buttery cookie base, chocolate frosting and
nuts on top. It's really decadent .. deelicious!! This
recipe is not easy to find.)

Ingredients:
1 cup butter
1 cup packed brown sugar
1 egg yolk
1/2 teaspoon vanilla extract
2 cups flour
1 cup chocolate chips
1 cup finely chopped pecans
Cream butter in medium mixing bowl. Gradually add sugar, beating until
light and fluffy. Add egg yolk and vanilla; beat until well blended.
Add flour, blending well. Press dough evenly into ungreased jelly roll
pan. Bake at 325 degrees for 20 minutes or until lightly browned.
Remove from oven and immediately sprinkle with chocolate chips.
Once chips have melted on surface, spread with spatula to ice. Sprinkle
icing with pecans. When cookies have cooled completely, cut into 2 x
1-inch bars.
Makes: 5 dozen bars

Caramel Slices (A little browner than this if you
use butter)

1 c. soft shortening (better
with butter)
2 c. brown sugar, packed
2 eggs
3 1/2 c. sifted flour
1/2 tsp. salt
1 tsp. soda
1 c. finely chopped nuts
Mix well shortening, sugar and eggs. Sift together flour, salt and
soda. Stir in. Add nuts. Shape in 2 rolls, 2 inches across. Chill. Heat
oven to 400 degrees (moderately hot). Slice dough 1/8 inch thick.
Cookies spread very little during baking so place fairly close together
on cookie sheet. Bake on ungreased cookie sheet 8-10 minutes. Makes
about 12 dozen cookies.

Christmas Sugar
Cookies

2 1/4 c. flour
1/4 tsp. salt
2 tsp. baking powder
1/2 tsp. shortening (butter makes it special)
1 teaspoon nutmeg (sift in with flour)
1 c. sugar (I like to use part honey, like 3/4 sugar and 1/4 honey)
2 eggs, beaten
1/2 tsp. vanilla
1 tbsp. milk
Sift flour, salt, nutmeg and baking powder together. Cream shortening
and sugar together. Add eggs and vanilla, then add sifted ingredients
and milk. Roll out on floured board and cut out with Christmas cookie
cutters.
Decorate with colored sugars, frosting. My pesonal favorite is
those longish sprinkles. If you are going to frost the cookies bake
them before you decorate. Bake on baking sheet at 350 degrees for 12
minutes or until brown around the edges.

Chocolate Chip

2 cups shortening, part butter
is good too
2 cups white sugar
2 cups brown sugar
2 tsp vanilla
4 cups flour
2 tsp baking soda
4 eggs
1 bag chocolate chips
Preheat oven to 350°F.
Cream shortening and sugars. Add vanilla. Beat, mix flour and soda. Add
to creamed sugar and vanilla alternating with the beaten eggs. Roll
into balls. Press with a fork. Bake at 350°F 8 minutes on the
second rack in oven.

Peanut Butter
Cookies

2 sticks butter (with peanut
butter, shortening or margarine will work as well)
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups peanut butter
2 1/2 cups flour
1 tsp baking soda
1 tsp vanilla extract
Mix butter, sugar and peanut butter together. Add eggs, flour, baking
soda and vanilla extract.
Roll into small balls. Place on a baking sheet separated.
Mash with a fork to get the criss cross pattern.
Bake at 350°F for 20 minutes or until golden brown.

Chocolate
Peanut Butter Oaties
( I don't have a picture of this one. It looks like a lump of
fudge with oatmeal in it. It's more like candy than cookies, but
it's yummy!

2 cups sugar
1/2 cup milk
1 stick magarine
3 Tbsp. cocoa
1 tsp. salt
1/2 cup peanut butter
3 cups of 3 minute oats
1 tsp. vanilla
Directions
Combine sugar, milk, margarine, and cocoa in a saucepan over medium
heat. Bring to a boil and continue to boil for 1 minute. Remove from
heat, add salt and vanilla. Blend in peanut butter and oats. Drop by
spoonfuls onto waxed paper, and let cool for at least 5 minutes.
